Healthy Tomato Mozzarella Toast

Stretchy Mozzarella Cheese:
¾ cup cashews, soaked
¾ cup water
2 tbsp tapioca starch
1 tbsp nutritional yeast
1 tsp lemon juice
1 tsp apple cider vinegar
¼ tsp garlic powder
¼ tsp salt
To Assemble Toasts:
Whole grain toast, thick-cut
Stretchy Mozzarella Cheese
Fresh tomatoes, sliced
Fresh basil leaves
Dates, pitted and finely chopped*
Nectarines, finely chopped
Prepare the Stretchy Mozzarella Cheese (you can do this the day before if you want).
Start by soaking the cashews in boiling water for ~20 minutes. Drain.
Combine all of the cheese ingredients in a blender. Blend on high speed until completely smooth, scraping down the sides as needed.
Transfer the mixture to a frying pan. Bring heat to medium and stir constantly until the mixture thickens and becomes stretchy, about 5-7 minutes (turn up the heat slightly if needed). Note: This recipe works best on a nonstick pan, but a regular pan will work, too - just make sure to stir frequently to prevent it from burning.
Once the cashew cheese has become sticky, remove from heat and set aside.
Toast the whole grain bread. Layer on: Stretchy Mozzarella Cheese, tomato slices, a drizzle of balsamic vinegar, and fresh basil leaves. If you want your toast to have a bit of sweetness, add a few chopped dates or nectarines as well.
Serve immediately. Enjoy! :)
*Date spread or date paste would also work great here!
